I just completed my lesson plan for our first recipe creation from “Rachael Rays Yum-O! The Family Cookbook”
The first fall cooking class starts this week – I have 16 Itty Bitties as Rach calls them (or Lil Chefs like we call them) on Thurs and 13 Lil Chefs on Friday. We are going to make Lady Bug Pizzas – a simple version of an English muffin pizza except – the english muffin is spread with pesto – topped with shredded cheese, a tomato slice, and chopped black olives for lady bug spots. Of course we made home made pesto in class minus the nuts!
My 3 year old (who takes the class) heard the recipe today and said “eww I will not eat a bug!” hence my search tonight on the internet was for countries who eat bugs – and there is even a “Eat a Bug Cookbook” from a man in Seattle – don’t worry we will not be cooking thru that one anytime soon! But many people eat crickets, grasshoppers, beetles – they claim they have quite a bit of protein and raising them is better on our environment then raising cows, chickens – and it takes less space to produce them….a nice thought, huh!

Awesome pizza!! Everybody got a tiny taste and we all loved it. I have to go buy the book. I use a lot of Racheal Rays recipes and the kids really do like her stuff. Have a good weekend!

LOVED the pizza. Is it wrong that I snuck bites to “check the temperature”?? It smelled so good and I was surprised to see the kids gobbling down black olives and tomatoes!

So sorry we missed this class–Mary Catherine just loves olive pizza. We will have to get the recipe and try it ourselves.
